At the Department of Food Science at the University of Copenhagen (UCPH FOOD), we carry out research and education that help to solve the global challenges in relation to food. Our research involves the development of new foods and ways of producing them, and we combine the latest research and practice in the training of our students. Lot 1: Pulsed electric field (PEF) equipment enables a wide range of food processing applications. Based on the characteristic use of high-voltage electric current applied in the micro-second range the PEF system electroporates food materials for gentle drying, extraction, and structural modification as well as microorganisms in preservation treatments. The PEF equipment will be an integral part of a next generation food processing strategy for sustainable food and ingredients in the Department of Food Science.
