Description

Two pulse electrical field instruments for processing and food safety studies. 10 day waiting period from the publication in Doffin/TED. Two pulse electrical field (PEF) apparatuses for processing and food safety studies. The apparatuses are designed to process both liquid (continual) and solid substances (batch processing). PEF apparatus 1 has an extra chamber for processing solid substances. PEF apparatus 2 has an extra chamber for processing solid substances and an extra chamber for processing liquids. PEF apparatus 2 is also equipped with a heat exchanger for temperature control, CIP (cleaning in place) system, and PEF interface for control. The apparatuses run with voltage up to 24 kV, with variable pulse frequency up to 200 Hz. The electrical conditions, liquid speed and temperature are all registered. Processing volume up to 250 L/hour depending on the process terms. Heat exchanger up to 100 L/time. The electrical discharges damage membranes in cells so that microorganisms die and larger cells are opened. The equipment is used to kill microorganisms in liquid with minimal (or no) heating. PEF is used for solid substances to change product quality and extract intracellular components.
